  • 3 cups butternut squash, peeled, seeded, cubed
  • 340 g Brussels sprouts, trimmed and halved
  • 225 g bow tie pasta
  • 340 g cooked smoked sausage (cajun or regular)
  • 5 cloves garlic, minced
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • ¼ teaspoon smoked paprika
  • Fresh thyme leaves

Instructions

  1. Preheat oven to 200°C (400°F).
  2. Toss butternut squash with olive oil, salt, and pepper. Roast on a parchment-lined baking sheet for 15-20 minutes until tender.
  3. Similarly, roast Brussels sprouts tossed with olive oil, salt, and pepper for 20-30 minutes until golden brown.
  4. Cook bow tie pasta in salted water until al dente. Drain and reserve some water.
  5. In a skillet, sauté sliced sausage until browned. Remove and set aside.
  6. In the same skillet, cook minced garlic in butter until fragrant. Add pasta, seasonings, and toss well.
  7. Combine roasted vegetables and sausage in the skillet; mix gently before serving.
