  • 56 large Portobello mushrooms
  • 2 tablespoons butter
  • 2 cloves garlic (crushed)
  • 1 tablespoon fresh parsley (chopped)
  • 56 fresh mozzarella balls (sliced thinly)
  • 1 cup grape tomatoes (sliced thinly)
  • 1/4 cup balsamic vinegar
  • Optional: 2 teaspoons brown sugar

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a small bowl, melt the butter and mix in crushed garlic and chopped parsley.
  3. Place the Portobello caps on a baking sheet, brush them with garlic butter, layer mozzarella slices inside each cap, and top with sliced tomatoes.
