  • 11.5 lb chicken breasts
  • 1/4 cup lime juice (divided)
  • 2 tbsp canola oil (OR vegetable oil)
  • 1 tsp jalapeno (minced)
  • 1 tsp honey
  • 1 tsp salt
  • 1 tsp chili powder
  • 1/2 tsp paprika
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/4 tsp cumin
  • 1/4 tsp coriander
  • 1/4 tsp cayenne pepper (optional)
  • 1/4 tsp ground black pepper
  • 2 tsp olive oil
  • 2 tbsp red onion (chopped)
  • 1/2 cup frozen corn
  • 1/2 cup black beans (rinsed)
  • 1/4 tsp salt
  • Pinch ground black pepper
  • Soft taco flour tortillas
  • Fresh cilantro (chopped)
  • Avocado (chopped into chunks)
  • Avocado dressing
  • Lime wedges

Instructions

  1. In a Ziplock bag, combine half the lime juice, canola oil, jalapeno, honey, salt, chili powder, paprika, onion powder, garlic powder, cumin, coriander, cayenne pepper, and black pepper. Add chicken; seal and shake to coat. Refrigerate for up to 24 hours or at room temperature for 30 minutes.
  2. Heat a non-stick skillet over medium-high heat. Cook marinated chicken for about 5 minutes on one side until browned. Flip and reduce heat to medium; cook until internal temperature reaches 160°F (71°C). Let rest before slicing.
  3. In the same skillet, add olive oil; sauté chopped red onion until translucent. Add frozen corn and black beans; season with salt and pepper.
  4. Assemble tacos by placing sliced chicken and filling in tortillas. Top with cilantro, avocado chunks, drizzle with avocado dressing if desired, and serve with lime wedges.
