  • 23 tablespoons coconut milk, adjust for desired thickness
  • 1/2 tsp coconut extract (optional)

Instructions

  1. Preheat your oven to 325°F (163°C). Grease and flour a loaf or bundt pan.
  2. In a mixing bowl, cream the softened butter with sugar until light and fluffy (about 3-4 minutes).
  3. Beat in eggs one at a time, then mix in vanilla extract, optional coconut extract, and sour cream until well blended.
  4. In another bowl, whisk together flour, baking powder, and salt.
