  • 1/4 cup coconut oil (liquid state)

  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon ground nutmeg
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • pinch salt (optional and to taste)
  • 4 ounces softened cream cheese
  • 1/4 cup granulated sugar
  • 3 tablespoons all-purpose flour

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 9×5-inch loaf pan.
  2. In a large bowl, whisk together the egg, pumpkin puree, sugars, coconut oil, sour cream, vanilla extract, cinnamon, pumpkin pie spice, and nutmeg until smooth.
  3. Gently fold in the flour, baking powder, baking soda, and optional salt until just combined.
  4. Pour two-thirds of the batter into the prepared pan. Smooth out the top.
  5. In another bowl, mix together the cream cheese filling ingredients until smooth. Pour this over the pumpkin batter.
  6. Add the remaining pumpkin batter on top and smooth it out gently.
  7. Bake for about 48 minutes until golden brown and a toothpick inserted comes out clean or with a few moist crumbs.
  8. Cool in the pan for 15 minutes before transferring to a wire rack.
