  • 12 oz rotini pasta
  • 2 tbsp olive oil
  • 1 tbsp butter (for searing)
  • 1 tsp Cajun seasoning
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • Salt & black pepper, to taste
  • 2 tbsp butter (for sauce)
  • 4 cloves garlic, finely minced
  • 1 cup heavy cream
  • 1 cup whole milk
  • 4 oz cream cheese, softened
  • 1 cup Velveeta, cubed
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • Pinch of red pepper flakes (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook the rotini pasta in a large pot of salted boiling water until al dente, about 10-11 minutes. Drain and set aside.
  2. In a skillet, heat olive oil and butter over medium-high heat. Season chicken with Cajun spices and sear until golden brown, about 6-8 minutes. Remove from skillet.
  3. In the same skillet, melt butter, sauté minced garlic until fragrant, then stir in heavy cream and milk. Add cream cheese and Velveeta; whisk until smooth.
  4. Combine cooked rotini with the sauce in the skillet, mixing gently until well-coated.
  5. Serve hot with sliced chicken on the side and garnish with parsley.
