  • 1 lb boneless, skinless chicken breasts
  • 12 oz linguine pasta
  • 1 cup heavy cream
  • 1 cup Velveeta cheese, cubed
  • 1 cup shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 3 tablespoons unsalted butter, divided
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and black pepper, to taste
  • 3 cloves garlic, minced
  • 1 teaspoon red pepper flakes, optional
  • 1 tablespoon chopped parsley, optional, for garnish
  • Reserved pasta water, if needed

Instructions

  1. Season chicken with Cajun seasoning, garlic powder, onion powder, salt, and pepper.
  2. Heat olive oil and 2 tablespoons of butter in a large skillet over medium-high heat. Sear chicken on both sides until golden brown; top with Parmesan to melt.
  3. Cook linguine in salted boiling water until al dente; reserve some pasta water before draining.
  4. In the same skillet, melt remaining butter, sauté garlic and red pepper flakes.
  5. Add heavy cream and bring to a simmer. Stir in Velveeta until melted, then add mozzarella and Parmesan until thickened.
  6. Combine linguine with sauce and toss gently to coat.
