  • 1 lb boneless, skinless chicken breasts
  • 12 oz medium shell pasta
  • 1 cup heavy cream
  • 4 oz cream cheese
  • 1 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese, divided
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • Salt and black pepper to taste

Instructions

  1. Cook the shell pasta in salted boiling water until al dente. Drain and reserve some pasta water.
  2. In a large skillet, heat olive oil and butter over medium-high heat. Sear chicken seasoned with Cajun spices until golden-brown and cooked through. Remove and set aside.
  3. In the same skillet, combine heavy cream and cream cheese until smooth. Stir in Parmesan cheese until thickened.
  4. Mix in cooked pasta and half of the mozzarella until well combined, then return chicken to skillet or plate separately.
  5. Top with remaining mozzarella, allowing it to melt slightly before serving.
