  • 1 large sweet onion (peeled and chopped)
  • 34 cloves garlic (minced)
  • 1 ½ pounds boneless chicken breast
  • 30 ounces canned cannellini beans (drained)
  • 7 ounces chopped green chiles (mild or hot)
  • 1 cup frozen corn
  • 4 cups chicken broth
  • 8 ounces cream cheese (cut into cubes)

Instructions

  1. In a large pot or Dutch oven over medium heat, melt the butter. Sauté the chopped onion until translucent, about 5 minutes. Stir in minced garlic and cook for another minute.
  2. Add ground cumin and dried oregano to the pot. Mix well before placing the boneless chicken breasts in the pot.
  3. Pour in the chicken broth, followed by drained cannellini beans, chopped green chiles, and frozen corn. Stir to combine and bring to a gentle boil.
  4. Reduce heat to low, cover the pot, and let simmer for about 25 minutes until the chicken is cooked through (165°F).
  5. Shred the cooked chicken using two forks and return it to the pot along with cream cheese cubes. Stir until melted and combined.
