  • 1 cup shredded cheddar cheese
  • ½ cup shredded mozzarella cheese
  • ½ cup all-purpose flour
  • 1 large egg
  • ¼ cup breadcrumbs

  • ½ teaspoon onion powder
  • ½ teaspoon paprika
  • ¼ teaspoon salt
  • ⅛ teaspoon black pepper
  • Vegetable oil or canola oil for frying

Instructions

  1. If using canned corn, drain it thoroughly; if using frozen, thaw and pat dry.
  2. In a mixing bowl, whisk the egg lightly.
  3. Add flour, cheddar cheese, mozzarella cheese, breadcrumbs, garlic powder, onion powder, paprika, salt, and black pepper to the bowl with the egg.
  4. Fold in the corn until well combined.
  5. Shape the mixture into small balls or discs.
  6. For frying: Heat oil in a pan to 350°F (175°C). Fry bites until golden brown on each side (about 2-3 minutes).
  7. For baking: Preheat oven to 400°F (200°C) and bake bites for 15-20 minutes until golden.
