  • 2 carrots (cut into discs)
  • 3 cloves garlic (grated)
  • 1 teaspoon ginger (grated)
  • 2 teaspoons curry powder
  • 1 teaspoon turmeric powder
  • 5 cups vegetable broth
  • 1 can (15 ounces) crushed tomatoes
  • 1 cup dried lentils (green or brown)
  • 1 pound potatoes (peeled and cut into bite-size chunks)
  • 5 ounces kale (chopped)
  • Salt and black pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté chopped onion and sliced carrots for about 3 minutes until softened.
  2. Add grated garlic, ginger, curry powder, turmeric powder, and red pepper flakes. Sauté for another minute.
  3. Pour in vegetable broth and crushed tomatoes. Stir in lentils, cubed potatoes, chopped kale, salt, and black pepper. Bring to a simmer.
  4. Cook for approximately 30 minutes until lentils are tender. Adjust seasoning as needed before serving.
