  • 1 cup diced zucchini
  • 1 cup chopped red bell pepper
  • 1 cup diced onion
  • 2 tbsp crumbled feta or goat cheese
  • Salt and pepper to taste
  • 1 tsp olive oil
  • 1 slice whole grain bread
  • ripe avocado
  • Everything bagel seasoning (or salt, pepper, chili flakes)
  • 1 cup sliced strawberries
  • 1 cup blueberries

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a cast-iron skillet, heat olive oil over medium heat. Sauté zucchini, onion, and bell pepper for about 3–4 minutes until softened.
  3. In a mixing bowl, whisk together eggs with salt and pepper. Pour over the sautéed vegetables in the skillet and sprinkle cheese on top.
  4. Bake in the preheated oven for 12–15 minutes until set. Let cool slightly before slicing.
  5. While baking, toast your whole grain bread until golden brown. Mash ripe avocado in a bowl and spread it on the toast; season as desired.
  6. Serve one slice of frittata alongside half of the avocado toast topped with fresh strawberries and blueberries.
