  • 500g chicken breast, cubed
  • 200g mushrooms, sliced
  • 1 red bell pepper, sliced
  • 3 garlic cloves, minced
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp hoisin sauce
  • 300g fresh asparagus
  • 200g jasmine rice
  • 400ml water
  • Pinch of salt
  • 1 tbsp olive oil
  • Salt & black pepper to taste
  • 1 tbsp sesame oil
  • Cornstarch mixed with 2 tbsp water

Instructions

  1. Rinse the rice under cold water. In a pot, bring 400ml of salted water to a boil and add the rice. Cover and simmer on low heat for about 15 minutes until tender. Fluff with a fork.
  2. While the rice cooks, heat olive oil in a separate pan over medium heat. Add asparagus seasoned with salt and pepper, roasting for about 8-10 minutes until tender-crisp.
  3. Heat sesame oil in a wok or large skillet over high heat. Add minced garlic and sauté until fragrant (about 30 seconds). Add cubed chicken and cook until golden brown (5-7 minutes).
  4. Stir in sliced mushrooms and bell pepper, cooking until softened. Pour in soy sauce, oyster sauce, hoisin sauce, and cornstarch slurry. Mix well until the sauce thickens.
  5. Serve the stir-fry hot alongside fluffy rice and roasted asparagus.
