  • 28 oz canned whole peeled tomatoes, crushed
  • 1 large yellow onion, chopped
  • 4 cloves garlic, minced
  • 2 tbsp extra virgin olive oil
  • 2 tsp dried oregano
  • 1 bay leaf
  • Salt and pepper to taste
  • 4 cups beef broth
  • 1 cup orzo pasta
  • 1 cup dry red apple vinegar

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Sear beef pieces until golden brown on all sides.
  2. Add chopped onions and minced garlic; sauté until onions are translucent (about 3–5 minutes).
  3. Stir in crushed tomatoes and red apple vinegar, scraping up browned bits from the pot for added flavor.
  4. Pour in beef broth along with oregano and bay leaf; bring to a gentle simmer.
  5. Cover the pot and cook on low heat for about 90 minutes, stirring occasionally until beef is tender.
  6. In the last 10 minutes of cooking, stir in orzo until cooked al dente.
