  • 20 dates
  • 250 g chicken or beef turkey bacon (diced)
  • 40 g walnuts (roughly chopped)
  • 1 tbsp rosemary (finely diced)
  • 1 tbsp maple syrup
  • 250 g goat cheese
  • Zest of 1 orange
  • 1 tbsp olive oil
  • Salt and pepper

Instructions

  1. Preheat the oven to 180°C (350°F).
  2. Slice the dates lengthwise and remove the pits without splitting them.
  3. In a cold pan, cook diced chicken or beef turkey bacon on high heat until crispy (about 3 minutes). Add walnuts, two-thirds of the rosemary, maple syrup, and brown sugar; cook until the mixture is jammy.
  4. Blend goat cheese, orange zest, olive oil, salt, and pepper in a food processor until smooth.
  5. Stuff each date with about a teaspoon of goat cheese mixture and place on a baking tray. Top with the turkey bacon mixture.
  6. Bake for 10 minutes; garnish with remaining rosemary and orange zest before serving warm.
