  • 1 can (20 oz) crushed pineapple (with juice)
  • 1 cup chopped pecans (optional)
  • 1 cup sweetened shredded coconut (optional)
  • 1 package (8 oz) cream cheese, softened
  • 1 cup unsalted butter, softened
  • 3 cups powdered sugar
  • 23 tbsp pineapple juice (reserved from the can)

Instructions

  1. Preheat oven to 350F (175C). Grease and flour two 9-inch round cake pans.
  2. In a mixing bowl, combine flour, sugar, baking soda, and salt. Mix in eggs, vanilla extract, and crushed pineapple until blended. Fold in optional chopped pecans and shredded coconut.
  3. Divide batter between prepared pans; bake for 30-35 minutes until a toothpick inserted comes out clean. Cool for 10 minutes before transferring to wire racks.
  4. For frosting, beat cream cheese and butter until smooth; gradually add powdered sugar and mix in reserved pineapple juice for spreadability.
  5. Assemble by layering cake with frosting in between and frost the top and sides. Garnish with pecans or coconut if desired.
