  • 1 cup (1 stick) unsalted butter, softened
  • 34 cups powdered sugar
  • 1 tsp vanilla extract
  • 23 tbsp milk, to adjust consistency

Instructions

  1. Preheat the oven to 325°F (165°C) and grease and flour a bundt pan or loaf pans.
  2. Cream softened butter and sugar until light and fluffy.
  3. Add eggs one at a time, mixing well after each addition along with vanilla extract.
  4. Whisk together flour, baking soda, and salt in a separate bowl.
  5. Gradually combine dry ingredients with buttermilk into the butter mixture, mixing until just combined.
  6. Fold in shredded coconut and chopped pecans gently.
  7. Pour batter into prepared pan(s) and bake for 60-80 minutes or until a toothpick comes out clean.
  8. Cool in the pan for 15 minutes before transferring to a wire rack.
  9. In another bowl, beat together softened cream cheese and butter until smooth.
  10. Gradually add powdered sugar while mixing until well combined. Stir in vanilla extract and adjust consistency with milk as needed to make it spreadable.
