  • 1 cup sun-dried tomatoes
  • 5 cloves garlic
  • 1½ cups pumpkin puree
  • 2 cups low sodium chicken broth
  • 1 lb lean ground beef (or turkey/chicken/lentils)
  • 1 medium onion
  • 2 big carrots
  • 3 celery stalks
  • ⅓ cup dry apple vinegar
  • 1 cup crushed tomatoes
  • 1 cup milk of choice
  • Olive oil and spices

Instructions

  1. Heat olive oil in a medium pot and sauté sun-dried tomatoes, garlic, and sage for one minute. Add pumpkin puree, broth, basil, and cinnamon; simmer for 15 minutes.
  2. In a large pot, brown the ground meat over medium heat; drain excess liquid.
  3. Sauté diced onions, carrots, and celery until soft. Combine with meat.
  4. Deglaze the pot with apple vinegar; mix in crushed tomatoes.
  5. Blend the pumpkin mixture until smooth; stir it into the meat and vegetable mixture.
  6. Add milk and seasonings; simmer for 30–60 minutes until thickened.
  7. Cook pasta according to package instructions and serve topped with Pumpkin Bolognese.
