  • 1/2 cup yogurt (plain or dairy-free)
  • 2 pounds boneless, skinless chicken thighs
  • 1 1/2 tablespoons ginger (minced or grated)
  • 1 tablespoon garlic (minced or grated)
  • 2 tablespoons coconut oil
  • 1 white or yellow onion, chopped
  • 2 tablespoons non-dairy butter or ghee
  • 2 tablespoons tomato paste
  • 1 tablespoon garam masala
  • 2 teaspoons curry powder
  • 1 teaspoon ground coriander
  • 1 teaspoon cumin
  • 1 teaspoon salt + more to taste
  • 14 oz can of unsweetened full-fat coconut milk
  • 1 cup pumpkin puree
  • 2 teaspoons chili powder

Instructions

  1. In a medium bowl, mix yogurt, ginger, garlic, garam masala, turmeric, chili powder, and salt. Add chicken pieces to coat them well. Marinate in the refrigerator for at least 30 minutes.
  2. Heat coconut oil in a large skillet over medium heat. Brown the marinated chicken in batches for about 3 minutes each side. Remove from pan.
  3. In the same skillet, add non-dairy butter or ghee and sauté onion until soft (5-7 minutes). Stir in ginger, garlic, tomato paste, and spices; sauté until fragrant (2-3 minutes).
  4. Pour in coconut milk and pumpkin puree; stir until combined. Simmer for about 10 minutes.
  5. Return browned chicken to the skillet; simmer for an additional 8-10 minutes until cooked through.
