  • 1/2 cup butter
  • 2 cups all-purpose flour
  • 3 tbsp cane sugar
  • 2 tbsp cinnamon
  • 1/2 cup canned pumpkin
  • 2 cups almond milk (or milk of choice)
  • 4 eggs
  • 1 tsp vanilla extract
  • For the Mascarpone Filling: 8 oz mascarpone, 1 tbsp almond milk, 1 cup powdered sugar

Instructions

  1. Prepare brown butter by heating it in a small saucepan over medium-high heat until golden brown. Set aside to cool.
  2. In a blender, combine flour, sugar, cinnamon, pumpkin, almond milk, eggs, vanilla extract, and cooled brown butter. Blend until smooth.
  3. Lightly grease a nonstick skillet and pour enough batter to cover the bottom while swirling. Cook until bubbles form; flip and cook for another 30 seconds.
  4. For the filling, mix mascarpone and almond milk in a bowl with an electric mixer until smooth. Gradually add powdered sugar.
  5. Spread the mascarpone filling on each crepe before folding.
