  • Salt, pepper & chili flakes to taste
  • 1/2 cup cherry tomatoes, halved
  • 1 kiwi, peeled and sliced
  • 45 strawberries, halved

Instructions

  1. Sauté the spinach: Heat olive oil in a small pan over medium heat. Add garlic and sauté for about 30 seconds until fragrant. Toss in baby spinach and cook until wilted. Season with salt.
  2. Cook the eggs: In a non-stick pan, fry the eggs sunny-side-up over medium heat until the whites are set but yolks remain runny. Season with salt and pepper.
  3. Prepare fresh sides: While cooking eggs, slice kiwi and strawberries. Toss cherry tomatoes with a pinch of salt and chili flakes.
  4. Assemble the plate: Arrange sautéed spinach on one side of the plate, place sunny-side-up eggs next to it, and surround them with kiwi slices, strawberries, and cherry tomatoes.
