  • 4 boneless, skinless chicken breasts
  • 1 cup roasted red peppers, chopped
  • 1 cup fresh spinach, chopped
  • 1 cup mozzarella cheese, shredded
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Carefully cut pockets into each chicken breast.
  3. Sauté garlic in olive oil; add spinach until wilted.
  4. In a bowl, mix together roasted red peppers, mozzarella, Parmesan, sautéed spinach, oregano, basil, salt, and pepper.
  5. Stuff each chicken breast with the mixture and secure openings.
  6. Sear chicken in a skillet until golden brown on both sides.
  7. Transfer to a baking dish and bake for 20-25 minutes until fully cooked.
