  • Unsalted butter
  • Heavy cream
  • 1.5 tsp baking powder
  • 1.5 tsp baking soda
  • 1 tsp salt
  • ⅔ cup vegetable oil
  • 2 tsp instant coffee
  • ¾ cup boiling water

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round baking pans with parchment paper.
  2. In a mixing bowl, sift together flour, baking powder, baking soda, sugars, cocoa powder, and salt.
  3. In another bowl, whisk eggs, oil, buttermilk mixture, sour cream, and instant coffee until smooth. Combine with the dry ingredients.
  4. Slowly stir in boiling water until well mixed.
  5. Pour batter evenly into prepared pans and bake for 30-35 minutes or until a toothpick comes out clean.
