  • 500 g chicken breast, cut into bite-sized pieces
  • 1 green bell pepper, sliced
  • 1 red bell pepper, sliced
  • 1 medium onion, sliced
  • 2 tbsp vegetable oil
  • 2 cloves garlic, minced
  • 1 tsp ginger, minced
  • 12 tsp crushed red chili flakes (adjust to spice level)
  • 3 tbsp soy sauce
  • 1 tbsp vegetarian oyster sauce (or substitute)
  • 1 tsp sesame oil
  • 1 cup uncooked jasmine rice
  • 3 cups water
  • Pinch of salt

Instructions

  1. Begin by cooking the jasmine rice. In a pot, combine water and a pinch of salt, bring to a boil, add rice, reduce heat to low, cover, and simmer for about 15 minutes until fluffy. Keep warm.
  2. While the rice cooks, heat vegetable oil in a large wok or skillet over medium-high heat. Sauté minced garlic and ginger for about 30 seconds until fragrant.
  3. Add chicken pieces and cook until golden brown on all sides.
  4. Stir in sliced onion and bell peppers; cook until slightly softened.
  5. Pour in soy sauce, vegetarian oyster sauce, sesame oil, and crushed red chili flakes. If desired, add cornstarch mixed with water for thickening.
  6. Cook everything together for an additional 2–3 minutes until well combined.
  7. Serve hot over prepared jasmine rice.
