  • 5 to 6 ears of corn (about 5 cups)
  • 1/2 cup vegan mayo
  • 1 to 2 tbsp nutritional yeast
  • 1 tbsp fresh lime juice
  • 1 tsp lime zest
  • 1/4 cup chopped cilantro
  • Chili powder, black pepper, and salt to taste

Instructions

  1. Boil water in a large pot and add corn. Cook for 5-7 minutes until tender.
  2. Transfer corn to a grill and grill for 2-3 minutes per side until charred.
  3. Let cool slightly, then cut the kernels off the cob into a mixing bowl.
  4. In another bowl, mix vegan mayo, nutritional yeast, lime juice, lime zest, chili powder, black pepper, and salt until smooth.
  5. Add chopped cilantro to the corn and pour the dressing over it; mix gently until coated.
  6. Taste and adjust seasoning as needed; serve immediately or refrigerate until ready.
